So I used to love fritters, but when I try to make a healthy version they always turn out tasting a little off. So the other night, I was craving bananas but instead of just eating it plain, I of course had to try another fritter recipe But this one turned out fantastic. I think it’s the orange juice and zest that really makes the difference. And they pair perfect with either Greek yogurt (for diary lovers) or coconut milk ice cream (for a non-dairy option). Give this recipe a try for your next dessert, appetizer or holiday party time. Have a wonderful rest of the week.
1 orange (1/8 cup of juice and 1/2 of the orange for zest)
3 bananas (browned slightly)
1/4 cup honey
dollop of Greek yogurt or coconut milk ice cream for the side
Directions: Zest 1/2 of the orange and mix will with the almond flour. Slightly heat the honey, just enough to make it runny and warm but not hot. Peel bananas and cut each banana into 3 large sections. Add 1/8 cup of orange juice with the honey and mix well. Take you orange chunks and dip into the honey mixture, then into the almond flour, then back in the honey and lastly into the almond flour again. This is where you can choose to fry them in coconut oil in a cast iron skillet or bake them at 400 degrees F for about 15 minutes or until slightly browned on top. Serve immediately topped with a dollop of greek yogurt or coconut milk ice cream with a drizzle of honey.
