I love a good hash and this one is definitely one of my favorites. The flavors of the bison, seasonings and bacon make it all work together fantastic. My inspiration for this dish was the “Bowl of Doom” that we had at Kozy 2 Day in Dallas right before we headed back. It was so great that I had to recreate it. Although my bowl was a little smaller, it was perfect in taste. Give it a shout. I know your whole family will love this recipe for a weekend brunch or weekday dinner.
Ingredients- makes 2 very large bowls or 3 medium bowls.
1 pound bison
freshly ground black peper
4 pieces of bacon
2 large sweet potatoes
salsa (optional topping)
Directions: Brown bison with basil, oregano, black pepper & thyme. Take out of skillet. Brown bacon. Take out of skillet. Boil sweet potatoes then brown with basil, oregano, black pepper & thyme. Take out of skillet. Fry the egg. Layer your bowl with bison on the bottom, then sweet potatoes, little more bison, bacon, and egg and avocado on top (salsa optional).
