Perfect Meat Sauce

I am always trying out different sauces on random veggies, but this meat sauce that I made last week turned out amazing!  It is so easy and a perfect way to have your kids eat and love broccoli.  Who would have thought…..broccoli in meat sauce?  But it adds a little much needed greens without the bland taste.  The recipe only takes about 20 minutes start to finish, so it is perfect for during the weeknights for the family.  Not only is it yummy over spiraled squash like I served it, it works great over any veggies or just by itself.  I made a ton extra, and so glad I did!  I’ll be able to eat it for my lunches this week over roasted brussels sprouts and as a snack right out of the fridge.  Hope you enjoy it as much as I do.

Ingredients:

1 cup steamed broccoli chopped
1 small yellow onion
1 small red onion
1 small orange bell pepper
2 cans of fire roasted tomatoes
1/4 cup olive oil (I used cilantro and roasted onion infused olive oil) plus extra for the skillet
sea salt to taste
3 medium sized squash
1.5 pounds ground turkey
4 cloves of garlic, chopped

Directions: Add a little olive oil in the skillet over med-high heat, add onions, orange bell pepper and garlic and saute until translucent.  Add in broccoli and saute for another 3 minutes.

Add in the turkey and saute until cooked through.

Place 1/4 cup olive oil and the fire roasted tomatoes in a sauce pan over med-high heat.  Using a potato masher, mash the sauce until you get your desired consistency (I like mine a little chunky, but you can do whatever you like best).  Add sauce to your turkey veggie mixture and mix well.  Let simmer for about 5 minutes or longer to let all those wonderful flavors take over.

Peal your squash and use your vegetable slicer to spiral them onto a plate. Place the squash onto a baking sheet and place in the oven for 10 minutes at 350 degrees F.  This is not to cook them, but rather to dry them out (since they hold a ton of liquid).  Then place them into a skillet with a little olive oil and toss until they are softened and cooked through.  Be careful not to let them get too slimy and sticky.

To plate, place some of the squash in a bowl and top with the perfect meat sauce.  Enjoy!  Remember this meat sauce saves perfectly for about a week in the refrigerator so make extra.  Trust me, you will thank me later 🙂  And for the finished product…….
