Spinach Meatballs

This was an experimental recipe that turned out fantastic.  I had quite a bit of spinach in my refrigerator and needed to use it up, so decided to give it a go.  Added it to make some delicious meatballs and served them over steamed broccoli.  A beautiful healthy dish that tastes awesome.



2 tablespoons Sirichai

1 tablespoon olive oil

1.5 cups chopped spinach

3 garlic cloves

1.25 pounds of ground turkey

sea salt

freshly ground black pepper

1 red onion, diced

olive oil cooking spray

Directions:  Spray a medium sized skillet with olive oil cooking spray and add the garlic cloves and red onion.  Saute until onions are translucent, about 5 minutes, then add in the spinach.  Cook an additional 2 minutes until spinach is slightly wilted.  Place all other ingredients into a large mixing bowl and add in the onion spinach mixture.  Mix until well combined (best mixed with your hands).  Form into 16 meatballs of equal size and add to an 8×8 baking dish sprayed with olive oil cooking spray.  Bake for 35-40 minutes at 375 degrees F, or until cooked through.  Serve over steamed broccoli.
